Great recipes! Tortilla soup is one of my favorites and I love that nachos recipe! We also eat less meat on the road, probably only 3x per week. Quinoa and black beans are huge parts of our diet and I make a salad similar to the taco recipe with a balsamic dressing in place of the tomato sauce. It’s such an easy, filling and healthy meal.
Did Sam’s family all read “The China Study”? 😉 I went mostly vegan for a while. It cleared up a number of issues for me. I have found it hard to do full time, but I try to do the meat sparingly thing and we only use certain dairy items. Anyway, good stuff!
