Airstream Kitchen Candy Cane Sugar Cookie Bars

It’s Christmas Week! Instead of sharing our normal posts, we’ve decided to mix it up and share mostly Christmas-y stuff this week. We have really made an effort to have the most awesome, mobile Christmas EVER, and so far we are doing pretty good. For one of our activities last week, we made another recipe from Real Mom Kitchen and I thought I’d share how we pulled it off in the Airstream. First off, these are super yummy. As she describes on her website, Real Mom says that sometimes she wants the taste of a sugar cookie, without all the hastle of rolling out, cutting, and then baking. These totally nailed it. They seriously taste like sugar cookies, but are much faster and easier to make. Plus, I love peppermint almost as much as I love pumpkin.

We don’t have a mixer in the Airstream. There’s just not enough room to store something that I would only use occasionally. Enter, the Blendtec. I already posted about how much I absolutely love it for smoothies and syrup, but this recipe was partly an experiment to see if I could get another use out of it.

Here’s the recipe modified for use with the Blendtec (settings in parentheses)  and limited kitchen equipment.

Ingredients

  • 1 cup butter, room temp
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla
  • 5 cups flour
  • 1 tsp salt
  • ½ tsp soda
  • 3 crushed peppermint candy canes

Frosting

  • ½ cup butter, room temp
  • ½ cup shortening
  • 1 tsp vanilla
  • pinch of salt
  • 4 cups powdered sugar
  • 5 Tbsp milk
  • 1 cup Hershey’s Peppermint Kisses or Bars chopped into pieces
Instructions
  1. In the Blendtec, cream together 1 cup butter with 2 cups sugar until fluffy. I used the “batter” setting. It got pretty thick though so keep your rubber spatula handy. Adding the eggs helps thin it back up.
  2.  Add eggs, one at a time, mixing after each egg (pulse). Add vanilla and mix well (batter).
  3. In a separate bowl, combine flour, salt, and soda and whisk (by hand) to combine.
  4. Pour creamed mixture over flour mixture in the bowl and whisk (by hand) until just until combined adding crushed candy canes into the dough when the batter is almost combined. (My arms got tired so my awesome husband helped with this one.)
  5. Spread on a greased 9×13 pan (because that’s all you have). Bake at 375 degrees for 10-15 min, until light golden brown or until a toothpick comes out clean.
  6. Cool completely. While it’s cooling, wash out your Blendtec because you need it for the frosting.
  7. For frosting, combine ½ cup butter and shortening until smooth and creamy (batter). Add vanilla and salt (pulse).
  8. Add powdered sugar in 1-2 cup increments until combined (speed 2), then add milk & mix until smooth and spreading consistency (pulse). Spread over cooled cookie and sprinkle with the 1 cup of chopped peppermint Hershey Kisses. Cut into bars and serve.
 There you have it! My kids gobbled these up and I definitely ate more than I should. Happy baking!

Claytor Lake State Park Virginia

Claytor Lake State Park VirginiaWhile returning to Virginia with our newly purchased Airstream, we needed to make a stop in Radford, Virginia for a business visit by Sam. Searching on Google Maps, I located a State Park nearby that put us 1/2 hour away from Sam’s site visit. There really wasn’t much else in the area so I guessed it would have to do.

We were not excited. You see, we Had A Bad Experience with a state park 6 weeks earlier in Omaha. It was dirty, hot, unpleasant, and left us a little worried about staying in State Parks generally. In fact, it was so bad it became the new standard. “Well, at least it wasn’t as bad as Lake Manawa.” You can understand our hesitation to try again.

We arrived at Claytor Lake State Park at 10 pm, having spent the entire morning in Ohio getting new tires for the Airstream (but that’s a different story). We were all very tired, and Sam had a work visit to make the next morning. We saw a few open sites at the park and backed into one of them blasting the trailer across the road with our headlights. Oops. We scrambled out of the truck, and put everyone to bed without even unhitching. It was late, and dark, and the kids were just exhausted.

Well, we thought, we’ll just have to deal with it.

The next morning was a pleasant surprise. The bathrooms were clean and well-kept, the campsites were fairly flat (which is a good thing since we didn’t level the trailer), there were plenty of trees, and it was peaceful & quiet. After dropping Sam off in the city, and running a few errands (groceries, anyone?) the kids and I spent the day exploring. We even picked out The Ultimate Campsite and when Sam got back we moved our trailer over to it for the next few days.

Ages of Kids: 7,6,3

Best features: Trail system, beach & playground, beautifully wooded campsites (but not all of them are – you have to be picky and be willing to back in. Sites 1-12 would be my best recommendation).

We had an amazing couple of days. Claytor Lake has an incredible trail system – all blazed with accurate colors so you don’t get lost. I spent a few mornings trail running, we went on a family hike, and we desperately missed our bikes. We spent an entire afternoon at the near deserted beach (I love the off season!) with its beautiful white sands and perfectly tempered water.playing at the beach at Claytor Lake State Park VAWe would have stayed longer, but the park is in fairly close proximity to Virginia Tech and fills up quickly on football weekends. We couldn’t get a spot past Thursday night. Oh well, next time. Because we definitely will be going back. Claytor Lake State Park 02

We bought an Airstream

“There it is!! I see it!” An 820 mile road trip and a previous week filled with anxiety for the unknown ended as we pulled parallel to the campground and spotted a red truck pulling a shiny, silver, Airstream through the guard station and back into the campsites. Movies, books, and toys forgotten, the kids craned their necks to look out the window and keep the Airstream in view. I’m pretty sure I was bouncing up and down in the front seat with excitement.

We bought an Airstream. I still can’t believe we did it. We’re crazy. The good kind of crazy though. I think. You know the moment you stop dreaming, planning, scheming, and hoping, and suddenly start DOING. That was this trip. Around the end of August we drove to through West Virginia and Kentucky to finally reach Carlyle Illinois where the owner, Dennis, had graciously reserved us a campsite.  He is one of the most kind, helpful people I have ever met – he helped us learn how to plug it in to shore power, connect all the hoses, level it, and put out the awning (total newbies here). He was genuinely excited for us to begin this journey of ours and has kept in contact via email to check up on us and see how we are doing. We are so grateful to him, his knowledge, and his love of Airstreams and the Airstream community. For those that are wondering why the shiny, silver, twinkie-looking travel trailers are so great? Part of the reason is people like him.
