This looks great. I grew up on zucchini bread and zucchini brownies. They were delicious because of all the butter and sugar. I am excited to try this recipe out. I would love a healthier option to my childhood favorite!
My wife over at Life Outside the Box (lifeoutsidethebox.co) is always making pumpkin muffins. She has allergies to soy, dairy, and wheat. However, she has also found that most recipes aren’t very healthy. Circumstantially, she has had to make her own healthy alternative. I’ll have to share this with her since she loves zucchini.
